There are many Waldorf Salad recipes, but as it’s getting colder and colder, a Winter Waldorf Salad is a great idea. This salad is perfect as all the ingredients you need to prepare it are in season even from October. Plus, it’s tasty and it doesn’t take long to prepare it. You can also add any other ingredients you like, so don’t stick to the following ingredients of this recipe. The main ingredients for this salad are:
- 6 celery stalks, thinly sliced
- 2 garlic crushed cloves
- 2 teaspoons olive oil
- 1/2 small red onion thinly sliced
- 1/4 cup whole-egg mayonnaise
- 1/2 cup roughly chopped walnuts
- 2 small red apples, halved, cored and thinly sliced
- 2 teaspoons wholegrain mustard
- 50 g mild blue chopped cheese
If you have liver disorders, don’t use mayonnaise.
Step 1. Heat oil in a frying pan over medium-high heat and add onion. Cook and stir for about 2 minutes or until you see it has softened. Add garlic and celery. Cook and stir for 3 minutes or until these ingredients are heated through. Add 1/3 cup walnuts and cook for 1 minute.
Step 2. Mix mayonnaise and mustard in a large bowl. Add apple and then stir to combine these ingredients.
Step 3. Combine mayonnaise mixture and celery mixture. Top the salad with blue chopped cheese and walnuts. You can serve it in Martini glasses. Add a crunchy breadstick, and garnish with pomegranate seeds if you want.
